Cacik (pronounced "jah-jik") - Turkish Summer Cold Yogurt Soup To a quart of cold, plain yogurt (can be non-fat), add 2 peeled and diced cucumbers and several chopped up cloves of fresh garlic. Add lots of chopped up fresh dill and fresh mint. (So much that you have a "stew-y" consistency.) Add enough cold water (not too much) to make the soup the consistency you like. (Be careful not to water it down very much.) Put this mixture in the fridge long enough for it to get very cold. Serve chilled in bowls. When serving, sprinkle a dash of hot pepper on top of each bowl and drizzle a tablespoonful of extra-virgin, cold-pressed olive oil on top. Serves four.
