Banana-Rhubarb Compote

1 cup sugar (half of this can be instant strawberry Jell-O powder!!)

1/4 - 1/2 cup water

1 1/2 cups diced  fresh rhubarb

1/2 teaspoon allspice

3 large bananas, sliced at the last moment before serving

In medium saucepan, simmer sugar, water, Jell-O and raw rhubarb, stirring, until sugar dissolves. Add allspice; cover and simmer slowly over medium heat about 5 minutes or until rhubarb is tender. Watch that you always have a little water in the pan, as sauce. Chill. Serve over sliced bananas. 6 servings.
